Bacon, Herb and Cheese Snack Bread

Makes: 22 servings

Prep Time: 15 minutes

Proof Time: 30 minutes

Bake Time: 25 to 30 minutes

4 1/2cups all-purpose flour

2 envelopes Fleischmann’s RapidRise Yeast

1 1/2teaspoons Spice Islands Italian Herb Seasoning

1 1/4teaspoons salt

1 clove garlic, minced

1 1/4cups water

1/4cup oil

2 eggs

8 ounces (2 cups) shredded cheese blend (cheddar Jack, cheddar mozzarella, etc.)

6 to 8slices cooked bacon, coarsely chopped

Combine 1 1/2 cups flour, undissolved yeast, Italian herb seasoning, salt and garlic in a large mixer bowl.

Heat water and oil until very warm (120∞ to 130∞F); gradually add to flour mixture. Beat 2 minutes at medium speed of electric mixer, scraping bowl occasionally. Add eggs and 1 cup flour; beat 2 minutes at high speed. Stir in 1 cup cheese and remaining flour to make a stiff batter.

Spread batter on greased 15 x 10-inch jelly roll pan or rimmed baking sheet with at least 1-inch sides. Sprinkle with remaining cheese; top with bacon. Cover; let rise in warm, draft-free place until doubled in size, about 30 minutes.

Bake at 375∫F for 25 to 30 minutes or until done. Cover loosely with foil during last 5 to 10 minutes of baking if cheese begins to overbrown. Remove from pan; cool on wire rack. Serve as strips or squares, or slice and use for sandwiches.

Cheddar Twists

Makes: 12 twists

Prep Time: 20 minutes

Proof Time: 20 to 40 minutes

Bake Time: 10 to 15 minutes

3 to 3 1/2 cups all-purpose flour

3 tablespoons sugar

2 envelopes Fleischmann’s RapidRise Yeast

1 1/2teaspoons salt

2/3 cup water

1 can (5 ounces) evaporated milk

1 1/2 cups (6 ounces) grated sharp cheddar cheese

1 egg white, lightly beaten with 1 tablespoon water

Grated Parmesan cheese, Spice Islands Poppy Seeds or Sesame Seeds, optional

Combine 2 cups flour, sugar, undissolved yeast and salt in a large bowl. Heat water and milk until very warm (120∞ to 130∞F); stir into flour mixture. Stir in cheese and enough remaining flour to make soft dough. Knead on lightly floured surface until smooth and elastic, about 6 to 8 minutes. Cover; let rest on floured surface 10 minutes.

Divide dough into 12 equal pieces. Roll each piece to 14-inch rope; fold each rope in half and pinch ends to seal. Twist each rope two to three times. Place on large greased baking sheet. Cover; let rise in warm, draft-free place until doubled in size, about 20 to 40 minutes.

Brush with egg white mixture. Sprinkle with Parmesan cheese, poppy seed, or sesame seed, if desired. Bake at 400∞F for 10 to 15 minutes, or until done. Remove from baking sheet; let cool on wire racks.
